Cajun seasoning gives this freshwater fish its “fiery” taste. It's the perfect crowd pleaser, especially when served over hot rice.

Ingredients

Olive oil

2 tsp(s)

Green bell pepper

1 medium, seeded and chopped

Onion

½ cup(s), chopped

Celery

2 stalk(s), medium, chopped

Garlic

2 clove(s), large, minced

Uncooked crayfish

1 pound(s), tails

Cayenne pepper

¼ tsp(s), or 1 tsp Cajun seasoning

Table salt

½ tsp(s)

Black pepper

¼ pinch(es)

Uncooked scallions

2 medium, chopped

Fresh parsley

1 tbsp(s), fresh, chopped

Instructions

  1. Heat oil in a large skillet over medium heat. Add pepper, onion, celery and garlic and cook until soft, about 5 minutes.
  2. Add crayfish, cayenne pepper or Cajun seasoning, salt and black pepper and stir to coat. Cook until crayfish are bright pink and cooked through, about 5 minutes. (Note: If you cannot find crayfish – also known as crawfish – you can substitute large, peeled, deveined shrimp with their tails intact.)
  3. Remove from heat and stir in scallions and parsley. Yields about 1 cup per serving.
