A sweet, just-picked tomato is key to this refreshing salad. If none look great, use naturally-sweet grape tomatoes instead.

Ingredients

Canned white beans

1 cup(s), drained and rinsed

Canned black beans

1 cup(s), drained and rinsed

Fresh tomatoes

1 large, large fresh diced

Onion

1 small, diced

Celery

1 stalk(s), large, diced

White wine vinegar

2 tbsp(s)

Fresh parsley

3 tbsp(s), Italian-variety, or basil, minced

Table salt

tsp(s), or more to taste

Black pepper

pinch(es), or more to taste

Instructions

  1. In a large bowl, combine beans, tomato, onion and celery. Gently stir in vinegar and sprinkle with parsley or basil; season to taste with salt and pepper.
  2. Serving size: 1 c
