Ingredients

Canned diced tomatoes

29 oz, with mild chilies

Roasted skinless chicken meat (dark and white meat)

3 cup(s), cubed

Creole seasoning

1 tsp(s)

Olive oil cooking spray

1 spray(s)

Frozen gumbo style vegetables

16 oz, okra, pepper and onion

All-purpose flour

1 tbsp(s)

Instructions

  1. Coat a large skillet with nonstick cooking spray. Add vegetables and sauté over high heat, stirring frequently, for 2 minutes. Stir in flour and cook 1 minute more.
  2. Stir in tomatoes, chicken and Creole seasoning. Cook over medium heat, stirring frequently, until hot, about 6 minutes. Yields about 375 ml (1½ cup) per serving.

Notes

For a soupier consistency, add a small amount of water or broth to the recipe.
