With an abundance of colour, taste and texture, this classic salad is a package of undeniable deliciousness.

Ingredients

Skinless chicken breast

600 g, (4 x 150g)

Moroccan seasoning

1 tbs

Fresh lemon rind

1 tsp, finely grated

Lemon juice

2 tbs

Olive oil

2 tsp

Lebanese cucumber

1 medium, halved, deseeded, thickly sliced

Tomato(es)

325 g, roughly chopped

Red radish

200 g, thinly sliced

Watermelon

200 g, chopped

Fresh flat-leaf parsley

¼ cup(s), chopped

Fresh dill

2 tbs, chopped

Olive oil

1 tbs

Fresh lemon rind

1 tsp, finely grated

Lemon juice

2 tbs

Wholemeal pita bread

120 g, (2 x 60g breads), toasted

Instructions

  1. To make marinade, mix all marinade ingredients in a small bowl until combined. Brush evenly over chicken and set aside in fridge to marinate for at least 15 minutes.
  2. Meanwhile, to make fattoush salad, toss cucumber, tomatoes, radishes, watermelon and herbs in a large bowl to combine. Whisk oil with lemon zest and juice in a small jug, season with salt and pepper, then drizzle over salad and set aside.
  3. Heat a large non-stick grill pan over medium heat. Cook chicken for 5–8 minutes each side, until lightly charred and cooked through. Remove from pan and rest for 5 minutes before cutting into thin slices.
  4. Tear pitas into bite-sized pieces and toss through salad. Serve chicken with salad.
