This easy chicken tikka masala makes a filling, delicious dinner that everyone will enjoy.

Ingredients

Canned diced tomatoes

2 400g can, (2 x 400g cans)

Brown onion

1 medium, chopped

Garlic

2 clove(s), crushed

Fresh ginger

1 tbs, finely grated

Garam masala

1½ tbs

Brown sugar

3 tsp

Ground cumin

½ tsp

Ground coriander

½ tsp

Chicken thigh, skinless, raw

810 g, fillets, fat trimmed (buy 900g)

99% fat-free, plain or natural yoghurt, unsweetened

1 cup(s), (240g)

Fresh coriander

1 tsp

Instructions

  1. Combine all ingredients, except yoghurt and coriander, in a 5.5L (22-cup capacity) slow cooker. Cover with lid. Cook on low for 7 hours (or high for 4 hours), or until chicken is very tender.
  2. Turn slow cooker off and stir through yoghurt. Divide among 8 plates and sprinkle with fresh coriander.

Notes

TIP: Serve with ½ cup (85g) of cooked brown rice per serving. To freeze: Cool and transfer to reusable containers after completing step 1. Freeze for up to 2 months. To serve, thaw overnight in the fridge, then reheat over low heat on a stovetop until hot throughout. Remove from heat and stir through yoghurt and coriander.
