We used a heart-shaped waffle iron but you can use a standard waffle iron instead.

Ingredients

Cooking spray

4 spray(s)

Whole wheat flour

½ cup(s)

All-purpose flour

½ cup(s)

Baking powder

1½ tsp

Ground cinnamon

½ tsp

Table salt

½ tsp

Banana

1 medium, cut into chunks

Fat free skim milk

½ cup(s)

Sugar

1 Tbsp

Canola oil

1 Tbsp

Egg

1 large egg(s)

Vanilla extract

1 tsp

Instructions

  1. Coat a waffle iron with cooking spray and heat according to the manufacturer’s directions.
  2. Place both types of flour, baking powder, cinnamon, and salt in a food processor or blender; pulse to blend, about 3 seconds. Add the banana, milk, sugar, oil, egg, and vanilla; pulse three times. Scrape down the side of the bowl, then process until smooth, about 30 seconds.
  3. Place some batter in the heated waffle iron according to the manufacturer's directions, close, and cook as directed until brown, about 2 minutes. Repeat with the remaining batter.
  4. Serving size: 1/4th of the waffles
