Studded with bits of sticky-sweet toffee, these blond bombshells get their toasty, nutty flavor from a combo of browned butter, white whole-wheat flour, and molasses-laden brown sugar.

Ingredients

Unsalted butter

5 Tbsp

Packed brown sugar

cup(s)

Unsweetened applesauce

½ cup(s)

Vanilla extract

2 tsp

Egg

1 large egg(s)

White whole wheat flour

2 cup(s)

Baking powder

2 tsp

Table salt

¾ tsp

Toffee baking bits

cup(s)

Instructions

  1. Preheat the oven to 350°F. Line a 9–inch square baking pan with parchment paper, leaving an overhang of 2 inches on two sides.
  2. In a small saucepan, melt the butter over medium-high heat. Reduce heat to medium and cook until the butter is browned and very fragrant, about 3 minutes. Scrape the butter into a medium bowl. Whisk in the sugar, applesauce, and vanilla. Add the egg and whisk until well combined.
  3. In a large bowl, whisk the flour, baking powder, and salt. Add the butter mixture and stir until well combined. Fold in the toffee bits.
  4. Pour the batter into the prepared pan and spread into a thin, even layer. Bake until the blondie is set, about 20 minutes. Let cool slightly. Using the parchment paper, lift the blondie out of the pan. Cut into 30 squares.
