This delicious watermelon salad features cucumbers, scallions, red wine vinegar, and crumbled feta cheese. No pots and pans are required, and the salad takes just seven minutes to make. We love using feta for salads. It's a type of curd cheese that has been produced in Greece for thousands of years. Traditionally it's made with goat’s or sheep’s milk, but it can also be made with cow’s milk. Feta is salted and cured in a brine solution for at least 3 months. Its flavor ranges from mild to sharp, and it can be soft to semifirm. Greek feta is probably most well known, but Bulgaria and France also produce fine examples.

Ingredients

Watermelon

2 pound(s), rind removed

Cucumber

1 medium, peeled and thinly sliced

Scallions

1 medium, thinly sliced

Red wine vinegar

3 Tbsp

Table salt

¼ tsp

Reduced fat feta cheese

¼ cup(s), crumbled

Instructions

  1. Cut the watermelon into 3⁄4-inch chunks.
  2. Combine the watermelon, cucumber, scallion, vinegar, and salt in a serving bowl; let stand about 10 minutes. Sprinkle with the feta cheese and serve at once. Yields 1 generous cup per serving.
