Here, we take it to another level by adding a tangy dressing of lime juice, agave nectar, olive oil, and red onion. Threaded onto skewers with crunchy cucumber, the combo makes a perfect pairing for grilled chicken, shrimp, or fish.

Ingredients

Fresh lime juice

2 Tbsp

Red onion

1 Tbsp, chopped

Extra virgin olive oil

1 tsp

Agave nectar

½ tsp

Table salt

Watermelon

1 cup(s), seedless, cut into (1-inch) chunks

Cucumber

1 cup(s), cut into (1-inch) chunks

Crumbled feta cheese

2 Tbsp

Fresh mint leaves

1 Tbsp, chopped

Instructions

  1. In a small bowl, combine the lime juice, onion, oil, agave, salt, and black pepper. Let stand at room temperature for 10 to 15 minutes.
  2. Using 4 (6-inch) skewers, alternately thread the watermelon and cucumber onto the skewers. Drizzle with the lime dressing. Sprinkle with the cheese and mint.
