There’s something about warm toasted nuts that is absolutely enticing. These are roasted with piney fresh rosemary and a pinch of cayenne for a hint of heat in every bite. We roast the nuts at a low temperature (300°F) for a few minutes on their own, without any seasoning, to establish a baseline of crunchy toastiness. Then the nuts are tossed with a little oil, rosemary, salt, and cayenne; the oil helps the seasonings stick. They’re tasty at room temperature, too, but at their flavor peak when warm.

Ingredients

Almonds

1 cup(s), whole, whole, raw

Olive oil

1 Tbsp

Rosemary

2 tsp, finely chopped

Kosher salt

½ tsp

Cayenne pepper

1 pinch(es), optional

Instructions

  1. Preheat the oven to 300°F. Line a sheet pan with parchment paper.
  2. Spread the nuts onto the prepared pan. Roast at 300°F for 12 minutes. Remove the pan from the oven (keep the oven on). Pour the nuts into a medium bowl. Add the oil, rosemary, salt, and cayenne; toss well to coat. Spread the seasoned nuts onto the pan. Roast until the nuts are crunchy and deeper brown in color, 13 to 15 minutes. Serve warm.
  3. Serving size: about 15 nuts
