If you’ve never had the pleasure of enjoying a walking taco, you’re in for a fun treat. For each serving, you open a bag of nacho chips, scoop in warm taco meat, and top with classic taco toppings. You then have a portable (hence the name “walking” taco) meal to scoop into with a spoon. You can line up the bags of chips and toppings for folks to assemble their own, or fill the bags for them so they can grab and go.

Ingredients

Cooking spray

Uncooked ground turkey breast

1 pound(s)

Chili powder

1 tsp

Kosher salt

½ tsp

Ground cumin

½ tsp

Garlic powder

½ tsp

No-salt-added canned tomato sauce

8 oz

Nacho-flavored tortilla chips

6 oz, six (1 oz) individual bags

Grape tomatoes

¾ cup(s), chopped

Reduced fat cheddar cheese

9 Tbsp, shredded

Scallions

¼ cup(s), chopped

Jalapeño pepper

2 small, thinly sliced

Instructions

  1. Coat a medium nonstick skillet with cooking spray and heat the pan over medium-high heat. Crumble the turkey into the pan and sprinkle with chili powder, salt, cumin, and garlic powder. Cook until the turkey is no longer pink, about 5 minutes, stirring frequently to crumble. Stir in the tomato sauce; cook until thickened, 2 to 3 minutes.
  2. Open chips pouches. Scoop a scant ½ cup of the turkey mixture into each pouch; top each with 2 tbsp tomatoes, 1 ½ tbsp cheese, 2 tsp scallions, and a few jalapeño slices.
  3. Serving size: 1 filled pouch
