This Italian-inspired dinner is a fabulous quick meal for one, or easily multiplied for a crowd. Swap in regular broccoli for the baby broccoli (AKA broccolini) if you prefer.

Ingredients

Cooking spray

2 spray(s)

Uncooked lean flank steak

4 oz

Sea salt

1 pinch(es), coarse variety

Black pepper

1 pinch(es)

Extra virgin olive oil

1 tsp

Jarred minced garlic

½ tsp, or fresh

Rosemary

½ tsp, fresh, minced

Canned cannellini beans

½ cup(s), rinsed, drained, warmed

Cooked baby broccoli

1 cup(s), or regular broccoli, steamed or roasted

Lemon

item(s), large, cut in a wedge

Instructions

  1. Coat a stove-top grill pan with cooking spray; heat over medium-high heat. Season steak with salt and pepper; cook, turning once, until cooked to desired doneness, about 6 minutes for medium-rare. Let stand 3 minutes; thinly slice.
  2. Meanwhile, put oil, garlic and rosemary in small cup; microwave just until fragrant, about 30 seconds.
  3. Arrange steak, beans and baby broccoli on a plate; drizzle oil mixture over top. Season with salt and pepper; serve with a squeeze of fresh lemon.
  4. Makes 1 serving.

Notes

A squeeze of fresh lemon juice over top helps bring the whole dinner together.
