This low-carb meal gives you your favorite pizza flavors, but without the crust. We cook up ground turkey breast and vegetables, then stir in marinara sauce and broil it under a blanket of mozzarella and pepperoni until melty and crispy.

Ingredients

Uncooked zucchini

2 medium, chopped

White onion

1 large, finely chopped

Red bell pepper

1 medium, chopped

Garlic powder

1 tsp

Kosher salt

Store-bought marinara sauce

Shredded part skim mozzarella cheese

Instructions

  1. Coat a 12-inch nonstick skillet with cooking spray and heat over medium-high. Add the turkey, then add the zucchini, onion, bell pepper, and garlic powder. Season with the salt. Cook until the turkey is cooked through and the vegetables are softened, 8 to 10 minutes, stirring occasionally.
  2. Stir in the marinara sauce and cook 2 minutes.
  3. Preheat the broiler to High. Transfer the turkey mixture to a broiler-safe baking dish. Top with the cheese and pepperoni.
  4. Broil until the cheese melts and pepperoni slices brown around the edges, 1 to 2 minutes. Season with crushed red pepper, garlic powder, and Italian seasoning, if desired.
