For these light and summery appetizers or snacks, you'll need four 8-inch skewers. Meal prep is effortless thanks to the string cheese and grape tomatoes. Cut the string cheese into small cubes and alternate with the grape tomatoes on the skewers. Or, you can get some little helpers to assist you while you make the homemade pesto sauce. The nutty, basil condiment will pack the flavor that will liven up the tomato and cheese skewers. To make this dish vegetarian-friendly, swap out the chicken broth for vegetable broth instead. Double or triple the recipe for your next summer cookout or picnic at the park.

Grape tomatoes

Light mozzarella string cheese

4 stick(s)

Fresh basil

1 cup(s), plus 4 basil leaves cut into quarters

Garlic

½ clove(s)

Extra virgin olive oil

1 Tbsp

Canned low-sodium chicken broth

½ fl oz, 1 Tbsp

Pine nuts

1 Tbsp

Grated Parmesan cheese

1 Tbsp

Kosher salt

Instructions

  1. Thread a tomato onto skewer.
  2. Follow with 1 piece of mozzarella cheese and 1/4 piece of basil.
  3. Repeat pattern until skewer is full ending with a tomato.
  4. Once 4 skewers have been prepared set aside.
  5. Prepare pesto.
  6. Chop garlic in a food processor until minced, about 15 seconds.
  7. Add basil, olive oil, chicken broth, pine nuts, Parmesan, salt and pepper and pulse until all ingredients are finely chopped, about 30 seconds. Serve skewers with pesto
  8. Serving size: 1 skewer and 1 tbsp pesto
