If you are grilling outside, you can cook the onions and mushrooms in a grill basket or grill pan following the same instructions we have here for stovetop cooking. If you’d like, substitute the cremini mushrooms with oyster mush- rooms or stemmed shiitakes.

Ingredients

Olive oil

4 tsp, divided

Uncooked onion

2 medium, thinly sliced

Mushrooms

8 oz, cremini or white, sliced

Fresh thyme

1 tsp, leaves

Steak seasoning

3 tsp, divided

Extra firm tofu

14 oz, drained

Table salt

¼ tsp

Instructions

  1. In large nonstick skillet, heat 2 tsp oil over medium. Add onions and cook, stirring frequently, until lightly browned, about 8 minutes. Add mushrooms, thyme, and 1 tsp steak seasoning. Cook, stirring frequently, until mushrooms are tender, about 5 minutes.
  2. Brush grill pan with remaining 2 tsp oil and heat over medium. Halve tofu lengthwise, then halve crosswise to make 4 thick slices. Sprinkle tofu with salt and remaining 2 tsp steak seasoning. Cook tofu until browned and heated through, about 3 minutes per side. Top tofu steaks with onions and mushrooms before serving.
  3. Serving size: 1 tofu piece and 1⁄2 cup vegetables
