This social media-famous bowl packs a big protein punch in one simple recipe. As hearty and satisfying as it is, the Points value stays low because this recipe relies on three of our favorite ZeroPoint foods: fat free cottage cheese, lean ground beef, and sweet potatoes. The savory taco-seasoned beef is balanced by the sweetness of the roasted potatoes and the hot honey. Feel free to riff on this by adding chopped tomatoes, red onion, hot sauce, cilantro, or crushed tortilla chips as a garnish.

Ingredients

Uncooked sweet potato

2 large, peeled and diced

Cooking spray

Uncooked 90% lean ground beef

Reduced sodium taco seasoning

1 oz, typically this is 1 packet

Water

Fat free cottage cheese

Instructions

  1. Preheat the oven to 425°F. Add the sweet potatoes to a parchment-lined sheet pan. Coat with 6 sprays of cooking spray. Season with the salt and pepper. Toss to combine. Roast 25 to 30 minutes, until sweet potatoes are tender.
  2. Meanwhile, coat a large nonstick skillet with 4 sprays of cooking spray. Heat on medium. Add the beef. Cook for 3 minutes, breaking up with the back of a wooden spoon or spatula. Sprinkle the taco seasoning over the beef. Continue cooking and breaking up meat until cooked through, about 3 more minutes.
  3. For each bowl, add a third of the roasted sweet potatoes, beef, cottage cheese, and avocado. Drizzle with the hot honey.
