Cara cara oranges are a variety of navel orange with a pinkish-red flesh that boasts both sweet and tangy notes. Use regular navels if you can’t find cara caras.

Ingredients

White wine vinegar

2½ Tbsp

Dijon mustard

1 tsp

Poppy seeds

1 tsp

Honey

½ tsp

Extra virgin olive oil

4 tsp

Table salt

1 pinch(es)

Black pepper

1 pinch(es)

Orange

4 medium, cara cara variety

Endive

3 head(s), large, trimmed, sliced crosswise in 1/2-in slices

Avocado

1 item(s), diced

Red onion

½ small, thinly sliced

Olives

8 olive(s), medium, Kalamata, pitted, sliced

Cilantro

½ cup(s), fresh, leaves

Instructions

  1. In a small bowl, whisk together vinegar, mustard, poppy seeds and honey; slowly whisk in oil. Season to taste with salt and pepper; set aside.
  2. Zest 1 orange; set aside zest. Peel oranges; slice in 1/2-inch-thick rounds.
  3. Arrange oranges, endive, avocado and onion on a serving platter; drizzle with dressing. Sprinkle with olives and cilantro; garnish with orange zest.
