Use any variety of fresh herbs you like or have on hand.

Ingredients

Olive oil

2 tsp

Uncooked string beans

1 pound(s), trimmed

Table salt

½ tsp

Black pepper

¼ tsp

Fresh lemon juice

1 Tbsp, or to taste (optional)

Fresh basil

2 Tbsp, chives, oregano, parsley, tarragon, or thyme, chopped, or to taste (optional)

Instructions

  1. In a large skillet, heat oil over medium-high heat. Add half of the green beans and cook, stirring frequently, until tender, 3 to 5 minutes (add a few tbsp of water if needed). Transfer the beans to a large bowl. Repeat with the remaining green beans. Add the salt and pepper to the beans and toss to coat. Add a squeeze of lemon juice and/or a sprinkle of fresh herbs, toss to coat.
  2. Serving size: generous 3/4 cup
