Leftovers make a great salad topping. Or make a wrap with the steak, baby spinach, sliced tomatoes, and a sprinkle of crumbled feta.

Ingredients

Cooking spray

4 spray(s)

Uncooked lean trimmed sirloin beef

2 pound(s)

Table salt

1 tsp, or to taste

Black pepper

1 tsp, freshly ground, or to taste

Garlic

4 clove(s), finely chopped

Rosemary

2 Tbsp, fresh, finely chopped (or 2 tsp dried rosemary)

Fresh oregano

2 Tbsp, finely chopped (or 2 tsp dried oregano)

Instructions

  1. Preheat oven to 400ºF. Coat a shallow roasting pan with cooking spray.
  2. Season beef all over with salt and pepper; transfer to prepared pan.
  3. Combine garlic, rosemary, and oregano in a small bowl. Rub herb mixture all over top of beef; gently press mixture into beef with your hands so it sticks.
  4. Roast until a thermometer inserted in center of beef reads a minimum of 145ºF, about 20 minutes.
  5. Let beef stand 5 minutes before slicing against grain.
  6. Serving size: about 3 oz

Notes

Serve with roasted potatoes and Brussels sprouts for a complete meal.
