These super easy veggie pinwheel sandwiches make easy and tasty appetizers or snacks. They're the perfect pre-dinner party pleaser or a quick lunch-box filler. Cream cheese anchors the red peppers and arugula to the tortillas. Allowing the tortillas to stand a few minutes before slicing get the peppery arugula and zesty red peppers a chance to meld their flavors. If arugula feels too peppery, us spinach in its place. With a short 10 minute prep time, these are easy to make again when the platter is empty, which it quickly will be.

Ingredients

Low fat cream cheese

½ cup(s), tub-style

10" high fiber, low carb flour tortilla

Italian seasoning

¼ tsp

Garlic salt

¼ tsp

Arugula

½ cup(s), stems removed

Roasted red peppers (packed in water)

½ cup(s)

Instructions

  1. In a small bowl, combine cream cheese, Italian seasoning and garlic salt.
  2. Place tortillas on a flat work surface. Spread each with 1/4 cup of cream cheese mixture. Top each with 1/4 cup of arugula and 1/4 cup of peppers. Roll up and tightly wrap in plastic wrap; chill 1 hour to allow flavours to blend.
  3. Remove wraps and slice into 1-inch pieces; arrange on a platter and serve. Yields 2 pieces per serving.
