Delicious with vanilla ice cream or plain yogurt, this jam is also wonderful in a turkey sandwich, with waffles or pancakes, or served over grilled chicken or fish. Make a double or triple batch and store extras in the freezer for a few months. Enjoy it chilled or slightly warmed.

Ingredients

Strawberries

1¼ cup(s), fresh, diced, divided

Mango

1¼ cup(s), fresh , diced, divided (or you can use thawed, frozen mango)

Honey

¾ tsp

Fresh mint leaves

1 Tbsp, for garnish

Instructions

  1. Combine 1 cup strawberries, 1 cup mango, and honey in a small saucepan; set over medium heat. Cook, stirring frequently, until juices are released and mixture is saucy, 5-10 minutes. Remove from heat; let cool.
  2. Stir in remaining strawberries and mango; serve sprinkled with mint.
