These egg squares feature fat-free cottage cheese, reduced-fat Mexican-style shredded cheese, green chili peppers, and both eggs and egg whites. These squares are also extremely versatile, since you can serve them as “party food” or as a main course for dinner. They're delicious right out of the oven or cooled to room temperature. To make them into a light lunch or dinner, you can bake in a 9-inch round pie plate and cut into wedges. We think salsa is a good condiment to serve with them.

Ingredients

Fat free cottage cheese

Weight Watchers Reduced-fat Mexican style shredded cheese

½ cup(s)

Canned diced green chiles

4½ oz, drained

All-purpose flour

6 Tbsp

Baking powder

¾ tsp

Egg

2 large egg(s), lightly beaten

Egg whites

1 large, lightly beaten

Table salt

¼ tsp

Instructions

  1. Preheat the oven to 350°F. Spray an 8-inch-square baking pan with nonstick spray.
  2. Combine the cottage cheese, Monterey Jack cheese, chiles, flour, baking powder, eggs, egg white, and salt in a large bowl until well blended. Scrape the mixture into the pan. Bake until the top is golden and a knife inserted in the center comes out clean, about 30 minutes. Cut into 16 squares and serve at once. Or cool completely in the pan on a rack then cut into 16 squares and serve at room temperature.
  3. Yields 2 pieces per serving.
