An elegant starter for an alfresco gathering, this dish offers the irresistible combo of sweet and salty, fruity and meaty. Each peach wedge is topped with a basil or mint leaf and wrapped in a strip of prosciutto. As the bundles grill, the prosciutto gets crispy, and the peach turns amazingly juicy with a concentrated peach flavor. These bites are great warm from the grill as well as cooled off to room temperature—so there’s no pressure to serve them right away.

4 oz, 8 [1/2 oz] pieces, each cut lengthwise into 3 strips

Instructions

  1. Coat a grill rack with cooking spray. Heat the grill to medium-high heat (about 425°F to 450°F).
  2. Cut each peach in half; remove and discard pits. Cut each peach half into 3 wedges. Top each peach wedge with a mint or basil leaf; wrap with 1 prosciutto strip. Arrange peach bundles on grill rack; grill until the prosciutto is crisp and peaches look juicy, about 2 minutes on each side.
  3. Arrange grilled peach bundles on a platter; sprinkle with pepper and drizzle with balsamic glaze.
  4. Serving size: 3 peach bundles
