Muesli is a versatile, delicious option for breakfast that can be eaten either hot or cold. Our version uses goji berries as an option, also known as wolfberries. They are prized for their red hue and lightly sweet-tart flavor, and are also a fun alternative to cranberries. You'll find them dried in specialty stores or natural-foods stores. They go well with the apricots and fresh blueberries, and also provide a beautiful color contrast. You don't have to cook the oats—just let them soak overnight in soy milk until they're softened, and they'll be all ready for you for breakfast in the morning.

Ingredients

Uncooked old fashioned rolled oats

Unsweetened dried goji berries

1 Tbsp, or dried cranberries

Dried apricot halves

3 half/halves, quartered

Blueberries

¼ cup(s)

Original or vanilla soy beverage

Ground cinnamon

½ tsp

Chopped pecans

1 Tbsp

Instructions

  1. Into 8-oz mason jar or similar container, layer half of oats, half of goji berries, half of apricots, and half of blueberries. Repeat layering.
  2. In cup, whisk soy milk and cinnamon together and pour into jar. Top with pecans. Place lid on jar and store in refrigerator until oats soften, at least 4 hours or overnight.
  3. Serving size: 1 jar
