Put a fun Latin American spin on this classic dinner recipe in this easy meatloaf that takes just 15 minutes of prep time. Cook this spiced-up meatloaf on a broiler pan so any excess fat can drip away. Line the bottom of the pan with foil for speedy clean up. If you want to add another Mexican element to this dish, consider substituting Mexican chorizo for the lean ground turkey or the beef. Make sure you buy Mexican—not Spanish—chorizo as the two are quite different. The Mexican variety is a spicy ground meat sausage that works beautifully here, and the assertive spices and flavor will further ratchet up this dish.

Cooking spray

Uncooked lean ground beef

½ pound(s)

Uncooked extra lean ground turkey breast

½ pound(s)

Egg whites

2 large

Cornbread stuffing dry mix

2 oz, (about 1 cup)

Onion

1 medium, chopped

Chili powder

½ tsp

Ground cumin

¼ tsp

Canned diced green chiles

4 oz

Canned enchilada sauce

8 oz

Instructions

  1. Preheat oven to 375°F. Coat a broiler pan with cooking spray.
  2. In a large bowl, mix beef, turkey, egg whites, stuffing mix, onion, chili powder, cumin, chiles and half of enchilada sauce together. Shape into an oval with your hands and place on prepared broiler pan.
  3. Cook for 1 hour, top with remaining enchilada sauce and bake for 5 minutes more. Slice into 6 pieces and serve.
  4. Serving size: 1 piece
