Ingredients

Olive oil

1 Tbsp

Uncooked onion

½ small, yellow variety, finely chopped

Red bell pepper

½ medium, finely chopped

Uncooked ground turkey breast

1 pound(s)

Taco seasoning mix

3 Tbsp

Pico de gallo

½ cup(s), or salsa

Lettuce

8 leaf/leaves, large

Tomato

1 cup(s), finely diced

Shredded reduced fat Mexican-style cheese blend

½ cup(s)

Red onion

½ cup(s), chopped, finely

Cilantro

¼ cup(s), finely chopped

Instructions

  1. Heat oil in a large nonstick skillet over medium heat. Once hot, add yellow onion and red pepper; cook, stirring frequently, until onions are translucent, about 3 to 5 minutes.
  2. And turkey to the skillet; cook, stirring frequently until turkey is cooked through, about 5 to 7 minutes.
  3. Stir in taco seasoning and pico de gallo or salsa; reduce heat to low, cover, and let turkey mixture simmer for 5 minutes.
  4. When ready to serve, divide turkey mixture amongst lettuce leaves; top each with some tomatoes, cheese, red onion, and cilantro.
  5. Serving size: 2 lettuce cups
