Grilled stone fruit halves are a simple dessert to make. Just be sure to clean the grates thoroughly before cooking the halved fruits—otherwise, they’ll taste like the steak or salmon you just grilled for dinner. The yogurt mixture makes a rich topping for the fruit and can be made ahead and refrigerated. Sprinkle with fresh mint for an extra burst of color and flavor.

Nectarine

2 medium, ripe but firm, halved and pitted

Plum

Ground nutmeg

Plain fat free Greek yogurt

Instructions

  1. Off heat, coat grill rack or grill pan with nonstick spray. Preheat gas grill or grill pan to medium-high, or prepare medium-high fire in charcoal grill.
  2. Sprinkle cut sides of peaches, nectarines, plums, and apricots with nutmeg and coat lightly with nonstick spray. Grill fruit, cut-side down, turning once, until lightly charred and softened, about 10 minutes. Transfer to platter.
  3. Meanwhile, in small bowl, stir yogurt, honey, and almond extract. Spoon 1 tbsp yogurt onto each fruit half. Sprinkle each with about 1 tsp pistachios.
  4. Serving size: 2 fruit halves and 2 tsp pistachios
