It takes just 15 minutes to prepare these grilled chicken sausage sandwiches topped with a sweet and spicy pineapple salsa that gets its slight kick from finely chopped jalapeño pepper. We chopped the ingredients in the salsa finely because it allows the flavors to mix better, giving you the taste of each flavor with every bite. You can add more lime to make it tangier or more jalapeño if you like it spicier. Precooked chicken sausages come in many different flavors. Stash a package in your freezer - then thaw, bake and slice to use in pasta dishes, casseroles and omelets.

Ingredients

Cooked chicken sausage

3 oz

Pineapple

¼ cup(s), fresh, minced

Cilantro

1 Tbsp, chopped

Red onion

2 tsp, chopped

Jalapeño pepper

1 tsp, finely chopped

Lime

1 wedge(s)

Light wheat hot dog bun

1 item(s), grilled if desired

Instructions

  1. Heat grill pan or outdoor grill to medium-high heat. Grill sausage, turning occasionally, until lightly browned and heated through, 5 minutes.
  2. Combine pineapple, cilantro, onion and jalapeno in a small bowl; squeeze in lime juice and toss.
  3. Place salsa in bun; top with sausage.
  4. Serving size: 1 sausage sandwich
