A play on a classic Greek dish of shrimp, tomatoes and feta cheese, these egg rolls are also excellent using cooked orzo in place of the rice. Egg roll wrappers come out thin and crispy when baked in the oven when sprayed with cooking spray. When working with egg roll wrappers, you want to be certain to put the mixture in the center of the wrapper for best results. To make this dish even faster, purchase pre-cooked shrimp from the grocery store instead of cooking your own. This makes an excellent appetizer or main dish.
