Mashed chickpeas are combined with lemon juice, dried oregano, and roasted red peppers for a hearty, zingy base for this Greek-style bowl. The chickpeas are topped with succulent shrimp and a fresh combo of crunchy cucumber, juicy tomatoes, and briny feta cheese. A generous dollop of store-bought tzatziki sauce brings everything together.

Ingredients

Canned chickpeas (garbanzo beans)

¾ cup(s), rinsed and drained

Fresh lemon juice

1 Tbsp, divided

Dried oregano

¼ tsp

Roasted red peppers (packed in water)

¼ cup(s), chopped

Cucumber

½ cup(s), chopped

Grape tomatoes

½ cup(s), chopped

Crumbled feta cheese

2 Tbsp

Cooked frozen shrimp

4 oz, peeled (or store-bought, refrigerated cooked shrimp)

Tzatziki (cucumber yogurt sauce)

2 Tbsp

Instructions

  1. In a medium bowl, mash together the chickpeas, 1 ½ tsp lemon juice, and oregano to your desired consistency; stir in the red peppers. Spoon the chickpea mixture into a shallow bowl.
  2. In the same bowl used to mash the chickpeas, toss together the cucumber, tomatoes, feta, and remaining 1 ½ tsp lemon juice. Spoon the cucumber mixture over the chickpea mixture. Arrange the shrimp and tzatziki in the bowl.
  3. Serving size: 1 bowl
