This might be the most refreshing summer appetizer of all time. Crisp, cool, juicy watermelon slices are topped with a creamy mixture of feta cheese whipped (in a mini food processor) with reduced-fat cream cheese. The finishing touch—a fresh basil leaf—is the perfect flavor complement. The bites hold up surprisingly well in the fridge, so you can assemble them on a pretty platter a couple of hours ahead and chill them until ready to serve. For a different taste, try mint leaves in place of basil.

Ingredients

Reduced fat whipped cream cheese

Crumbled feta cheese

Water

1½ Tbsp, to 2 tbsp

Watermelon

12 oz, seedless. cut into 16 small, thin wedges

Black pepper

¼ tsp

Fresh basil

16 leaf/leaves, small

Instructions

  1. In a mini food processor, combine the cream cheese and feta; process until almost smooth, stopping to scrape down the sides of the bowl. Drizzle with water and process until very smooth.
  2. Arrange the watermelon wedges on a platter; dollop about 1 generous tsp of cheese mixture over each. Sprinkle pepper evenly over wedges; top each piece with 1 basil leaf.
  3. Serving size: 1 piece
