Tacos get a new look, tucked inside a pliant flatbread shell instead of the usual tortilla. This inventive envelope of grilled salmon and its toppings makes for a quick, festive meal, ready in the time it takes to grill the salmon. This version is spiced up with Sriracha and dressed with a tart, lime juice mayo, and the usual lettuce and cilantro garnish complete the taco, though a slaw-like topping of shredded carrots and cabbage would also give a great, fresh crunch. The salmon in this recipe could also be baked or broiled, then flaked apart for the tacos. Try an herbed flatbread for more depth of flavor.
