Tacos get a new look, tucked inside a pliant flatbread shell instead of the usual tortilla. This inventive envelope of grilled salmon and its toppings makes for a quick, festive meal, ready in the time it takes to grill the salmon. This version is spiced up with Sriracha and dressed with a tart, lime juice mayo, and the usual lettuce and cilantro garnish complete the taco, though a slaw-like topping of shredded carrots and cabbage would also give a great, fresh crunch. The salmon in this recipe could also be baked or broiled, then flaked apart for the tacos. Try an herbed flatbread for more depth of flavor. This is a simple dinner that converts to the office lunchbox in a snap.

Ingredients

Fat free mayonnaise

1 Tbsp

Flatbread

1 item(s)

Lime

1 item(s), juice from 1/4 lime wegde

Uncooked skinless wild salmon fillet

6 oz, grilled

Lettuce

1 cup(s), chopped, shredded

Mango salsa

2 Tbsp

Cilantro

3 Tbsp, chopped

Sriracha hot sauce

1½ tsp, to taste

Instructions

  1. In a small bowl, combine mayonnaise and lime juice.
  2. Cut flatbread in half, making two rectangles. Fill each flatbread shell with grilled salmon. Top with mayonnaise mixture, salsa, lettuce, cilantro, and Sriracha.
