Convenience foods like frozen cooked shrimp and frozen cooked rice, shredded carrots, and a big batch of roasted veggies in the fridge, are key to getting this meal on the table fast. You don't even need to defrost the rice or shrimp first since they thaw and cook quickly in a pan over medium-high heat.

Ingredients

Cooking spray

Non starchy roasted vegetables without oil

1 cup(s), such as broccoli

Cooked medium grain brown rice

1 cup(s)

Cooked frozen shrimp

3 oz

Egg

1 large egg(s)

Shredded carrots

½ cup(s)

Low sodium soy sauce

1 Tbsp, or to taste

Scallions

2 Tbsp, sliced

Instructions

  1. Heat a nonstick skillet coated with cooking spray over medium-high heat; add roasted vegetables, rice, and shrimp; toss and heat through.
  2. Push rice mixture to side of pan and crack egg in middle; scramble egg. Stir egg into rice mixture, add carrots and sprinkle with soy sauce; warm through and garnish with scallions.
  3. Makes 1 serving.
