Sometimes the best busy-day meals are the ones that you assemble instead of cook. Here’s a great example: a rice bowl that you build from convenience foods—precooked rice, rotisserie chicken, packaged coleslaw mix, and salsa.

Ingredients

Cooked medium grain brown rice

Cooked shredded chicken breast

12 oz

Packaged coleslaw mix (shredded cabbage and carrots)

Avocado

2 medium, sliced

Salsa

Instructions

  1. Into each of 4 large, shallow bowls, arrange ½ cup rice, 3 oz chicken, 1 cup coleslaw mix, and ½ an avocado. Top each serving with 1/4 cup salsa.
  2. Serving size: 1 bowl
