For those who prefer savory breakfast to sweet, this classic Central American plate is hard to beat.

Ingredients

Cooking spray

Canned black beans

½ cup(s), undrained

Smoked paprika

¼ tsp

Corn tortilla

1 tortilla(s), medium

Egg

2 large egg(s)

Instructions

  1. In a small microwave-safe bowl, mash the beans with a fork to your desired consistency; stir in the paprika. Cover and microwave on High until thoroughly heated, 45 seconds to 1 minute.
  2. In a small nonstick skillet heated over medium-high or directly on a gas burner over medium-low, heat the tortilla until lightly charred, 30 seconds to 1 minute.
  3. Off the heat, coat the skillet with cooking spray and heat over medium-low. In a small bowl, whisk together the eggs and salt. Add the egg mixture to the skillet; cook, stirring occasionally, until the eggs are scrambled, 2 to 3 minutes. Arrange the eggs, tortilla, beans, tomato, onion, and avocado on a plate.
  4. Serving size: 1 plate

This recipe makes one serving but is easy to scale up to serve more people.
