Once you’ve made an omelet in your waffle maker, you may never go back to the old way again. It works surprisingly well, giving the eggs a crispy exterior and fluffy, perfectly cooked interior.

Ingredients

Cooking spray

2 spray(s)

Egg

2 large egg(s)

Table salt

1 pinch(es)

Black pepper

1 pinch(es)

Reduced fat cheddar cheese

2 Tbsp, sharp variety, shredded

Scallions

1 Tbsp, chopped

Red bell pepper

1 Tbsp, finely chopped

Cooked Canadian bacon

½ oz, chopped

Instructions

  1. Preheat DASH Mini Waffle Maker.
  2. In a medium bowl, beat eggs, salt, and pepper with a fork until well blended. Stir in cheese, scallions, bell pepper, and bacon.
  3. Lightly coat preheated waffle maker with cooking spray. Spoon a scant ½ cup batter onto waffle maker; cover maker and cook waffle until browned and cooked through, 2 to 3 minutes. Set waffle aside, keep warm, and repeat with remaining batter.
  4. Serving size: 1 omelet waffle
