Ingredients

Broccoli

8 oz, florets only

Olive oil cooking spray

6 spray(s)

Garlic

2 clove(s), chopped

Table salt

½ tsp

High protein pasta

6 oz

Fat free cottage cheese

1 cup(s), blended

Parmesan cheese

2 Tbsp, grated

Black pepper

½ tsp

Instructions

  1. Preheat oven to 425F. In a large bowl, coat the broccoli with the cooking spray. Add the garlic and salt. Toss to combine. Transfer to a baking sheet. Roast 15 to 20 minutes, until broccoli stems are tender.
  2. Meanwhile, cook the pasta according to package directions. Reserve ½ cup of pasta cooking water before draining the pasta. Return pasta to empty pot.
  3. To cooked pasta, add the cottage cheese, roasted broccoli, reserved pasta cooking water, Parmesan, and black pepper. Toss until well coated. Serve immediately.
