Here’s a riff on that hot cheesy restaurant dip we all love – except this one is low in fat and boasts 4 cups of broccoli.

Ingredients

Cooking spray

4 spray(s)

Broccoli

¾ pound(s), finely chopped (about 4 cups)

Shredded part skim mozzarella cheese

10 Tbsp, divided

Low fat cream cheese

¼ cup(s)

Reduced calorie mayonnaise

¼ cup(s)

Grated Parmesan cheese

¼ cup(s)

Minced onion

¼ cup(s)

Garlic

2 clove(s), finely chopped

Table salt

½ tsp

Black pepper

¼ tsp

Instructions

  1. Preheat oven to 375°F. Coat a 1-quart casserole or pie dish with cooking spray.
  2. Combine all ingredients, except 2 Tbsp mozzarella cheese, in a large bowl. Spoon mixture into prepared dish and smooth into an even layer; sprinkle with remaining mozzarella. Bake until top is lightly browned and dip is bubbly, 25 minutes. Serve warm with baked chips or fresh vegetables.
  3. Serving size: 1/4 c dip

Notes

Use a food processor to make quick work of chopping broccoli.
