Coffee and chili-rubbed grilled veggies and meat are a delicious warm-weather dinner. Serve with salad and rice on the side.

Ingredients

Chili powder

1 Tbsp

Instant espresso

1 Tbsp, powder

Kosher salt

2 tsp

Unpacked brown sugar

1 tsp

Dry mustard

½ tsp

Ground coriander

½ tsp

Black pepper

½ tsp

Ground cinnamon

1 pinch(es)

Ground cloves

1 pinch(es)

Cayenne pepper

1 pinch(es)

Uncooked lean flank steak

1 pound(s)

Bell pepper

2 item(s), medium, red, yellow, or orange, seeded, cut in rings

Red onion

1 medium, sliced into 1/4-inch rings

Cooking spray

Instructions

  1. Stir together chili powder, espresso powder, salt, sugar, dry mustard, coriander, black pepper, cinnamon, cloves and cayenne in a small bowl; season both sides of steak with half of spice mixture.
  2. Place pepper rings and onion slices in a large bowl; coat lightly with cooking spray and toss with remaining spice mixture.
  3. Off heat, coat a grill rack or grill pan with cooking spray. Preheat grill or grill pan to medium-high heat.
  4. Grill steak and vegetables, flipping once, until steak registers 145°F (for medium rare or longer to desired degree of doneness) and peppers and onions are tender, 4-5 minutes per side.
  5. Slice steak against grain; serve drizzled with juices from cutting board, grilled vegetables and a squirt of fresh lime juice.
