Ingredients

Sugar

1 tsp

Fresh lime juice

2 Tbsp

Lime zest

¼ tsp

Fresh mint leaves

1 Tbsp, (plus extra for garnish)

Rum

1½ fl oz, light variety

Carbonated lemon-lime soft drink

4 fl oz

Instructions

  1. Muddle sugar, lime juice, lime zest and mint leaves in a tall glass. Add ice, rum and soda; stir to combine. Serve garnished with optional fresh mint and a slice of lime.
  2. Serving size: 6 1/2 fl oz (plus ice)
