Shredded apple in the oat mixture adds lots of sweetness, replacing much of the added sugar you might otherwise expect.

Cooking spray

Uncooked old fashioned rolled oats

2 medium, unpeeled, cored, and shredded

Instructions

  1. Preheat oven to 375°F.
  2. In a large bowl, stir together oats, brown sugar, cinnamon, baking powder, and salt. In a medium bowl, whisk eggs, milk, vanilla, and 3⁄4 cup water. Stir milk mixture into oat mixture; fold in shredded apples.
  3. Coat an 11- X 7-inch baking dish with cooking spray. Spoon in oat mixture and sprinkle evenly with pecans. Bake, uncovered, until set, 25 to 30 minutes. Cut into 6 pieces and serve warm with berries.
  4. Serving size: 1 piece baked oatmeal and 1⁄2 cup berries

Notes

Though we call for berries as the topping, you can use any fruit you have on hand—try sliced bananas, orange sections, pomegranate seeds, or diced pears.
