This no-cook tomato sauce is quick and easy. For the best flavor, make it when ripe tomatoes are in abundance. You can use any type of tomato you have on hand. We call for Campri tomatoes, but an assortment of heirloom or grape tomatoes would make an equally delicious substitute. It's fantastic with pasta but also tasty on grilled chicken, fish or scrambled eggs. For a twist on a classic Caprese salad, spoon the sauce over thin slices of fresh mozzarella cheese. Or make bruschetta and use it as topping for grilled or toasted slices of hearty whole grain bread.

Ingredients

Tomato

4 cup(s), Campari, roughly chopped

Fresh basil

¼ cup(s), cut into ribbons

Garlic

3 clove(s), minced

Balsamic vinegar

1 Tbsp

Olive oil

1½ tsp

Table salt

1 tsp

Black pepper

½ tsp, freshly ground

Instructions

  1. In a glass, stainless steel or other non-reactive mixing bowl, mix together all ingredients; let stand at room temperature for 15 minutes. Yields about 1/2 cup per serving.
