Like the classic caesar dressing, creamy green goddess incorporates a bit of anchovy to lend welcome umami flavor. Umami is considered the fifth taste after sweet, salty, sour, and bitter. It is described as a meaty flavor. Soy sauce, parmesan cheese, and mushrooms are all examples of some everyday ingredients that cooks incorporate into dishes to add a welcome dose of meaty complexity. All that to say, don't be put off by the anchovy paste here. It really makes this herbaceous, bright dressing hit all the right notes. It is delicious in salads, makes a refreshing dip for raw vegetables, is an amazing sauce for poached chicken or salmon, and it's a tasty slather for most any sandwich.

Ingredients

Avocado

½ item(s), pitted, peeled

Light mayonnaise

¼ cup(s)

1% low fat buttermilk

¼ cup(s)

Fresh lemon juice

2 Tbsp

Fresh parsley

2 Tbsp, chopped

Fresh tarragon

1 Tbsp, chopped

Anchovy paste

1 tsp

Table salt

¼ tsp

Iceberg lettuce

Tomato

2 medium, heirloom or beefsteak variety, cut into thin wedges

Cooked turkey bacon

4 slice(s), extra crispy, crumbled

Red onion

½ small, finely diced

Instructions

  1. To make dressing, combine avocado, mayonnaise, buttermilk, lemon juice, parsley, tarragon, anchovy paste, and salt in blender and puree.
  2. Core lettuce and cut into 4 equal wedges. Place 1 wedge on each of 4 plates. Top evenly with tomatoes and drizzle with dressing. Sprinkle evenly with bacon and onion.
  3. Serving size: 1 salad with 1/4 cup dressing
