Traditionally found in the Philippines and Indonesia, lumpia are crispy spring rolls that are thinner and smaller than Chinese egg rolls. They use lumpia or spring roll wrappers, which you’ll find at Asian markets, often in the freezer case (thaw them overnight in the refrigerator); these wrappers are much thinner than egg roll wrappers and create the signature texture. The air fryer does a great job of getting the wrappers shatteringly crisp—no need to deep-fry. Shred the cabbage and carrots on a box grater to ensure the pieces are small enough to cook through in the short cook time.

Instructions

  1. In a medium bowl, place the cabbage, carrot, scallions, soy sauce, pepper, salt, and turkey; stir well until thoroughly combined.
  2. Working with 1 wrapper piece at a time, arrange the wrapper on a work surface so that the long edge is closest to you and the point of the triangle is pointing away from you. Spoon about 1 slightly rounded tbsp of filling along the bottom edge, shaping into a thin, roughly 4-in-long line along the center of the bottom of the wrapper. Brush the top point of the wrapper with egg white. Fold in the bottom points of the triangle over the filling, and tightly roll up the wrapper toward the top point. Arrange, seam side down, on a plate; cover loosely with plastic wrap. Repeat the process with the remaining wrapper pieces and filling.
  3. Preheat an air fryer, if necessary, to 400°F. Coat the air fryer basket with cooking spray and arrange 5 or 6 lumpia, seam side down, in a single layer in the basket (space them a little apart so air can flow between them). Air-fry for 4 minutes; turn the lumpia over and air-fry until golden and very crisp, 3 to 4 more minutes. Repeat with the remaining lumpia. Serve with chili sauce.
