Make our version of houmous in minutes! It's very low in fat - and extremely tasty.

Ingredients

Spring Onions

2 medium, trimmed and roughly chopped

Garlic

1 clove(s), crushed

Lemon

1 medium, grated rind of 1 small lemon

Chickpeas, cooked

1 can(s), large, drained, cannned, drained and rinsed

Medium fat soft cheese

200 g, (7 oz), with garlic

Salt

teaspoon(s)

Black pepper

teaspoon(s)

Mint, Fresh

3 sprig(s)

Instructions

  1. Put the spring onions, garlic, chickpeas, soft cheese and lemon rind into a blender or food processor. Add salt and plenty of black pepper. Blend for 15-20 seconds, until smooth.
  2. Tip into a bowl, then serve, scattered with a few mint leaves.
