Mashed root vegetables, a hearty change of pace from plain mashed potatoes, are loaded with nutrients. A perfect side dish for your Sunday roast.

Ingredients

Potatoes, Raw

2 portion(s), medium, peeled and quartered

Carrots, raw

2 medium, peeled and quartered

Butternut Squash

225 g, peeled and cut into chunks

Turnip

1 portion(s), medium, peeled and cut into chunks

Garlic

5 clove(s), peeled

Black pepper

teaspoon(s)

Salt

teaspoon(s)

Vegetable stock cube

1 cube(s), vegetable, make up to 120ml with hot water

Instructions

  1. Place potatoes, carrots, squash, turnip and garlic into a saucepan and cover with water. Add 1/8 teaspoon salt, cover and bring to a boil. Simmer until vegetables are tender, 10 to 12 minutes.
  2. Drain well and mash vegetables. Stir in vegetable stock, season to taste with salt and pepper and serve immediately.
