The turkey might be the star of the show, but we all know it’s what’s inside that counts! This stuffing recipe will add a little something extra to the dinner table, and will fill a 4kg turkey.

Ingredients

Olive Oil

2 teaspoon(s)

Onion

½ medium, finely chopped

Bacon medallions, raw

60 g, unsmoked, chopped

Sliced fruit loaf

90 g, made into breadcrumbs

Breadcrumbs, fresh

105 g, wholemeal

Lemon

1 zest(s) of 1

Sage, fresh

3 teaspoon(s), chopped

Instructions

  1. Heat the olive oil in a frying pan over a medium heat, then stir-fry a finely chopped onion and the chopped unsmoked bacon medallions for 5 minutes or until the onion is soft and the bacon is lightly browned.
  2. Transfer the mixture to a bowl, then add the fresh fruit loaf breadcrumbs, wholemeal breadcrumbs, 1 tbsp grated lemon zest and 1 tbsp chopped fresh sage. Season well.

Notes

To make this stuffing veggie-friendly, simply leave out the bacon.
