Honey

1 tablespoon(s), level, clear

Egg, whole, raw

2 large, raw

Skimmed Milk

50 ml

Vanilla Extract

1 teaspoon(s), level

Ground Cinnamon

1 teaspoon(s), level

Calorie controlled cooking spray

White sandwich thins

8 individual

0% fat natural Greek yogurt

4 tablespoon(s), to serve

Instructions

  1. Put 300g frozen Black Forest fruits in a pan with 2 tablespoons water and 1 tablespoon clear honey. Simmer for 3-4 minutes until the fruit is thawed. Remove from the heat and set aside.
  2. Break 2 large eggs into a shallow bowl. Add 50ml skimmed milk, 1 teaspoon vanilla extract and ½ teaspoon ground cinnamon and lightly beat with a fork.
  3. Mist a large pan with calorie controlled cooking spray and set over a medium heat. Dip 2 white sandwich thins into the egg mixture and allow to soak for a minute.
  4. Transfer the sandwich thins to the pan and cook for 2-3 minutes. Flip and cook for a further 2 minutes until golden. Repeat with 6 more sandwich thins, soaking one batch while another batch is cooking.
  5. Serve 2 sandwich thins per person, with the compote and 1 tablespoon 0% fat natural Greek yogurt spooned over and ground cinnamon sprinkled over the top.
