Our spiced-up version of the classic rum-and-ginger cocktail will leave you cold when it stares right back at you!

Ingredients

Lychees in Syrup

6 individual

Glacé Cherries

6 individual

Rum

180 ml

Sugar free ginger beer

750 ml

Lime Juice, Fresh

6 tablespoon(s)

Instructions

  1. Peel the lychees and carefully push a glacé cherry into each one. Once the lychee splits to reveal the cherry, secure it in place with a toothpick.
  2. Fill 6 highball glasses with ice cubes and pour 30ml dark rum into each glass.
  3. Top each with 125ml light ginger beer and 1 tbsp lime juice.
  4. Stir gently and serve decorated with the skewered lychee ‘eyeballs’.
