Serve with white fish, such as sea bass, bream or haddock. It’s also great with leftover roast chicken.

Ingredients

Calorie controlled cooking spray

4 spray(s)

Shallots

1 medium, finely chopped

Medium White Wine

75 ml

Vegetable stock cube

½ cube(s), 150ml

Single Cream

3 tablespoon(s), level

Chives, Fresh

1 tablespoon(s), chopped

Instructions

  1. Heat a small pan over a medium-low heat and mist with cooking spray. Add 1 finely chopped shallot and cook for 5 minutes, until softened. Add 75ml white wine, bring to the boil, then simmer for 5-6 minutes, or until reduced by two-thirds. Add 150ml vegetable stock, made with half a stock cube, and 3 tbsp single cream, and stir to combine. Simmer gently for 10 minutes, or until thickened. Season to taste and stir in 1 tbsp chopped fresh chives, then serve.
